Fried Rice with Curried Meatballs

| 1 cRice; uncooked |
| 1 smZucchini; halved & sliced |
| 1/2 lbGround turkey |
| 2 mdCarrots; halved & sliced |
| 3 tbDry bread crumbs |
| 1/2 lbGround pork |
| 2 md clovesGarlic; minced |
| 2 mdScallions; cut in 1" pieces |
| 5 tsCurry powder; divided |
Fried Rice with Curried Meatballs Preparation
Cook rice in boiling salted water, according to package directions until tender. Meanwhile, in a large bowl, combine ground pork and turkey, bread crumbs, 1 tsp curry powder and salt. In a large nonstick skillet, over medium-high heat, heat 1 Tbs oil. Add meatballs and brown well. Add carrots, cover and cook 5 minutes. Stir in zucchini, garlic and scallions and cook until tender, about 10 minutes. Push vegetables and meatballs to one side of pan. Add remaining 1 Tbs oil to pan and sitr in remaining 4 tsp curry powder. Add rice and cook, stirring until heated through, about 5 minutes.
