1 cChopped pecans; toasted
1/3 cMaple syrup
1/4 cButter; melted
2 tbBrown sugar
6 Skinned and boneless chicken
1 tbVegetable oil

Praline Chicken Preparation

Sprinkle Creole seasoning on both sides of the chicken. Cook chicken in butter and oil in a large skillet over medium heat 4 to 5 minutes on each side or until done. Remove chicken, reserving drippings in skillet. Place chicken on a serving platter; ste aside and keep warm. Add maple syrup and sugar to drippings in skillet; bring to a boil. Stir in pecans and cook 1 minute or until throughly heated. Spoon pecan mixture over chicken. Chicken mixture can be served over rice. The creole seasoning (Zatarain's) really makes the recipe. Well worth the $1 for a small bottle.

I would recommend using a half cup of pecan halves instead of 1 cup of chopped pecans. But other than that, one of the best recipes I have tried.

I found this recipe in a cookbook I had borrowed from a friend and made it for my family, it was a hit! Now I am making it for company. It's quick and easy but tastes excellant. I didn't have any Creole seasoning so I just used my favorite seasoning salt and added a little cayanne pepper for a kick.
