Filling:
4 largeEggs
1 1/2 cSugar
6 ozButter
1/4 cSugar
1 1/4 tsVanilla extract
2/3 cSemi-sweet chocolate chips
8 ozCream cheese; softened
1 largeEgg; beaten
1 cAll-purpose flour
1/2 cSemi-sweet chocolate chips

Fudge Filled Cupcakes Preparation

Preheat oven to 350 degrees. Line 30 cupcake tins with paper or foil cupcake liners. In double boiler, set over medium heat, melt the 2/3 cup of chocolate chips, butter and vanilla. Stir until smooth. Remove from heat. Beat the eggs until frothy, using a whisk or electric mixer. Gradually, beat in the sugar until it dissolves. Gradually, beat in the flour. Fold in the chocolate mixture. Fill the cupcake tins 1/3 full with the chocolate batter. Mash together the cream cheese, sugar and egg until blended. Fold in the 1/2 cup of chocolate chips. Drop a heaping teaspoonful of filling into each cupcake. Cover cream cheese filling with another generous spoonful of batter. Bake for 25 to 30 minutes. Let cupcakes cool completelyon a rack before storing in a covered container.

    I read the reviews, and I wonder if the person who ended up with far too much cream cheese filling may have not realized this recipe is for 30 cupcakes? I only had enough of the chocolate batter, however, for 12. I also find it difficult to follow a recipe that lists all ingredients, some repeated, in one list without stating which amount is for the batter, which for the filling. I made the mistake of using the filling sugar amount in the batter :(

    So disappointed with these. I followed the recipe exactly and I ended up with an obscene amount of cream cheese mixture, and hardly any batter to cover the mixture. It was all so so so sloppy, which was bizarre, and all I've ended up with is a brownie type cupcake that is streaked with a thin layer of cheese mixture. Sure it's tasty but it's just not at all what it says it is. Also the picture shows this lovely topping, wheres the ingredients for that? I wouldn't waste ingredients on it again.

    The taste is good, but the name is a bit misleading, since it's more cream cheese filled than fudge filled. Also, after baking, the cupcakes formed a crunchy meringue type crust, but this might be because I beat the eggs too long
