1/2 tsPaprika
1 tbolive oil
1/4 tsBlack pepper
1 garlic; minced
2 tsLow-sodium soy sauce
4 mdPotatoes

Garlic Potato Wedges Preparation

In a 7 x 11 inch baking dish, combine garlic, oil, soy sauce, paprika and pepper. Microwave on HIGH until the garlic softens, about 30 seconds. Cut each potato lengthwise into 6 wedges. Toss with the garlic mixture to coat. Microwave on HIGH, re-arranging the wedges twice, until the potatoes are tender, 15 to 18 minutes. Variations: Herbed Potato Wedges - add 1 T minced fresh rosemary or 1 t dried to the garlic mixture. Deluxe Potato Wedges - drain excess oil from the cooked potatoes and return them to the baking dish. Sprinkle with 1/2 c shredded Cheddar cheese, 1/4 c minced red peppers, 2 T thinly sliced scallions and 1 T chopped ripe olives. Microwave on MEDIUM until cheese melts, 3 to 4 minutes. I opted for the herb version, adding some fresh Rosemary. I also added a pinch of salt to the mix. Adding this to my favorites for sure!

I loved this recipe! Made it yesterday and I had to substitute 2 items... My wife does not like soy sauce so I eliminated it. I added parsley instead of paprika, just because I was out of it.
