This zucchini pie will pass as an apple pie! I had to make it to believe it...my family didn't believe me when I told them it wasn't apple. I used this homemade pie crust recipe. I had never made a pie crust before, and it turned out great! http://www.bigoven.com/recipe/best-pie-crust-ever/168727
Peel the zucchini, slice into quarters lengthwise. Remove the seeds, then cut into cubes. Toss together chopped zucchini, lemon juice, and salt. Place in skillet and cook until tender-crisp.
In a separate bowl, mix sugar, cinnamon, cream of tartar, nutmeg, and flour. Add cooked zucchini to this mixture and mix well.

Bake at 400 degrees for 40 minutes, until golden brown.
