Original recipe makes 4
2 sprigsFresh Rosemary
1 cCarrots; thinly sliced
1/4 cBalsamic vinegar
1 lbShrimp; "Baby"
1 lbOrzo pasta; cooked al dente
1 cZucchini; thinly sliced
1/2 colive oil
salt and pepper; to taste
1 cBlack Olives; Sliced
1 lbChicken breast; skinless
2 cArtichoke hearts; quartered
2 tbGarlic; fine chopped
2 tbLemon juice; up to 3
1/2 lbFeta cheese; crumbled

Greek Pasta Salad Preparation

Saute chicken,* shrimp and garlic in 1/4 c. olive oil. Add zucchini, squash and carrots. Cook to desired doneness. Add to Orzo pasta. Add all other ingredients and mix well. Garnish with Feta cheese. *Chicken can also be grilled. Serve hot as an entree. Serve cold as a salad.
