1 tablespoonButter; - or margarine
1/2 cupalmonds; - Slivered
1/2 cuponion; - Chopped
1/3 cupred pepper; Chopped
3 cupsBrown rice; (cooked in vegetable broth)
10 ouncesFrench-style green beans; - (frozen), thawed
1/8 teaspoonwhite pepper; - Ground
1/4 teaspoonTarragon

Green Bean Almond Rice Preparation

Melt butter in large skillet over medium-high heat. Add almonds; stir until lightly browned. Add onions and red pepper; cook for 2 minutes or until tender. Add rice, green beans, white pepper, and tarragon. Stir until thoroughly heated.

World's greatest Mother in law and I thought this was a great way to combine the green vegetable with the starch. Picky Wife, however, did not like the frozen French cut green beans. She said, 'next time, try canned'. Perhaps I will. Love the grn bn & rice combo.

While preparing this it seemed a bit dry, but that wasn't the case at all when served. We had baked Parmesan tilapia with this. Excellent!

I lost my connection while printing, so I went by memory and used Olive Oil...I also added celery and garlic and omitted the tarragon. It still turned out good...I used frozen green beans and red pepper from my garden...mmmmm good!

An excellent side dish, appeasing in taste and presentation. We used almond slices instead of slivers so they cooked a little too fast. Next time I would oven toast them and add them with the rice.
