Very few dishes are as simple, delicious and elegant as grilled salmon. Do not overcook it, however! Remember that all meat continues to cook even when removed from a heat source.

Original recipe makes 4
2 Salmon filets; about 1 pound
1/2 cupVegetable oil
1/2 cupLemon juice
4 Green onion; thinly sliced
3 tablespoonFresh parsley; minced
1 1/2 teaspoonsFresh rosemary; minced
1/2 teaspoonSalt
1/8 teaspoonPepper

Grilled Salmon Preparation

Place salmon in a shallow dish. Combine remaining ingredients and mix well. Set aside 1/4 cup for basting; pour the rest over the salmon.

Cover and refrigerate for 30 minutes. Drain, discarding marinade.

Grill salmon over medium coals, skin side down, for 15-20 minutes or until fish flakes easily with a fork. Baste occasionally with reserved marinade.

1/2 cup of maple syrup for a change of flavor.Spread mayonnaise in a thick layer on skin side up and bake 350 for 20 minutes. Remove skin and enjoy.

Simple, light and brightly-flavored grilled salmon recipe. I added chopped celery and substituted white onions for green onions, since I didn't have the latter handy. Worked just fine. How can you go wrong with grilled salmon? 30 minutes is just the right marinade time.
