Pumpkin Chip Muffins
| 16 ozCan pumpkin |
| 3 cAll-purpose flour |
| 1 1/2 cVegetable oil |
| 1 tsSalt |
| 2 tsBaking Powder |
| 4 Eggs |
| 2 cChocolate chips; (12 oz .) |
| 1 tsGround cinnamon |
| 2 cSugar |
| 2 tsBaking soda |
Pumpkin Chip Muffins Preparation
In a large mixing bowl, beat egg, sugar, pumpkin and oil until smooth. Combine flour, baking soda, baking powder, cinnamon andsalt; add to pumpkin mixture and mix well. Fold in chcoolate chips. Fill greased or paper-lined muffin cups 3/4 full. Bake at 400 F. for 16-20 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack. Yield: about 24 standard-size muffins.
