Helens Apple Coffee Cake

| 1 1/2 cBran flakes cereal |
| 1 -Egg |
| 6 ozApple juice concentrate |
| 3 tbVegetable oil |
| 1 1/2 cFlour; Oat flour, |
| 1/2 cNon-fat milk |
| TOPPING |
| 1/3 cNuts |
| 1 tsBaking soda |
| 1 tsCinnamon |
| 2 cFlour |
| 2 Apples; peeled & sliced |
| 4 tbSugar |
| 1 cSugar |
| 1 tsBaking Powder |
| 1 cButter |
| 2 Eggs |
| 1 cSour cream (light or yogurt) |
| 1 tsVanilla |
| 1/2 cBrown sugar |
| 3 tbEgg substitute; -OR- |
| 1 1/2 tsBaking soda |
| 1 tsCinnamon |
| 1/2 cOatmeal (rolled oats) |
| 2 tbHoney; -OR- |
| chopped finely |
| 1 lgBanana; mashed |
| 1/2 cApple juice |
| 1/4 c-Brown sugar, firmly packed |
| 3/4 cCalifornia dried figs |
| Whole Wheat or Allpurpose |
| 2 tsBaking Powder |
Helens Apple Coffee Cake Preparation
From: dciem!lfergus!larry@lsuc.uucp Date: Mon, 15 Nov 1993 14:47:06 -0500 Cream butter and sugar. Add eggs and vanilla. Add dry ingredients alternately with sour cream. Put half of batter in pan. Lay apple slices on batter and sprinkle 1/2 of topping over them. Add remaining batter and sprinkle topping on it. Bake in 350 oven 35-40 minutes.
