Original recipe makes 8
3 Eggs
2 Onions; minced
2 tbBacon bits; optional
4 slHigh fiber bread; stale
1 cLow fat cottage cheese
1 13.5-oz canevaporated skim milk
1 tbParsley; minced
Salt and pepper to taste

High-Fiber Bread Quiche Preparation

Line 10" pie pan with bread. Spread with cottage cheese and onions. Combine remaining ingredients except bacon bits, in blender. Cover; blend until smooth. Pour over onion layer.
