2 tbCocoa
1 cpecans; Finely chopped
1 cConfectioners sugar
2 1/2 cvanilla wafers; Crushed
3 tbLight corn syrup
3 tbRum
1/4 tsAlmond extract

Holiday Rum Balls #1 Preparation

1. Sift cocoa and confectioners sugar together and combine with cookie crumbs and pecans. 2. Add corn syrup, rum and flavorings. Roll into 1" balls, and then roll in granulated sugar. 3. I made these twice. The second batch I did away with rolling balls in sugar and just rolled them in desiccated coconut instead. I found the rolled in sugar too sandy in texture. I also added flaked chocolate to give extra sweetness instead.

I did a 2/3 - 1/3 split of rum and bourbon and poured both on the heavy side. After 1 day in the fridge, they were a huge hit. I need to make more!

I think I forgot to give these a rating - definitely great! A lot of traditional rum ball recipes use powdered sugar on the outside, and you could always do that with these, but the granulated sugar was good too.
