1/4 tsginger; Ground
1/2 lbBarley
1 tsDry; or a large dollop
5 cWater
2 Clovesgarlic; crushed
1 lgOnion; chopped
1 cWater
1/2 lbBlack eyed beans
1 tbSoya sauce
1 Bay leaf

Honey Baked Black-Eyed Beans and Barley Preparation

Bring beans, barley, water and bay leaf to the boil and simmer for 30 minutes. Mix together remaining ingredients. Add to the beans and barley and then add salt to taste. Pour into a casserole dish. Pour 1/3 cup of honey over the top. Cover and bake at 180C (360F) for an hour. Remove the lid for the last ten minutes. I served it with rice and salad. The aroma coming out of the kitchen as it baked was heavenly!
