1 1/2 ozKahlua
Coffee; To Fill The Glass
1 oz151 Rum; (2 Tablespoons)
Nutmeg
1 dsTriple Sec
Whipped Cream; To Garnish
Lime juice
Granulated sugar

Hubers Famous Spanish Coffee Preparation

Dip the rim of an 8- to 10-ounce glass in lime juice and then in sugar. Add the rum and Triple Sec. With a long match, carefully light the liqueurs, swirling the glass to melt the sugar on the rim. Pour in the Kahlua and then add the coffee. Top with whipped cream and sprinkle with nutmeg. Serve immediately. NOTES : Hubers Alex Perez is generally regarded as the Baryshnikov of Spanish Coffee. He has been serving as many as 200 of these flaming drinks a day for 17 years. He sent along his recipe as well as some tips for achieving the drama that is as essential to the presentation as the whipped cream. Can anyone tell me what a 'ds' is? As in the measurement for the Triple Sec? What would the equivalent be?

You can also add a flaming (rum soaked) sugar cube on the top of the cream for an extra flourish.

I have to admit at 6:30 in the morning I was not about to light anything on fire, so I did not add the rum, but even without the flaming rum it sure makes a heck of a cup of coffee!
