Preheat oven to 425.
Lightly coat a baking sheet with the olive oil spray.
Combine the dry ingredients in a shallow dish. In a separate dish, spray both sides of the chicken pieces lightly with olive oil spray, and dredge each piece in the crumb mixture, coating it evenly.
Place the nuggets on the baking sheet, and spray the tops with the olive oil spray. Bake for 12-15 minutes or until golden brown.
I've used Mrs. Dash Table Blend, and Trader Joe's 21 Seasoning Salute to make these, and both have been good. I'll bet you could really play with flavors here. Mexican? Curry?
