Love the flavor of this one from the Sugar Solution Cookbook. I cut the turnips (to 2/3 of the original), since I am not a fan and added more carrots and the celery since we love them. Sometimes I leave the turnips out entirely.
Combine the flour, oregano, thyme, salt and pepper. Dredge the beef to coat. Whisk the broth, wine and worcestershire sauce into the remaining flour mixture until smooth.
Preheat oven to 400 degrees.
Meanwhile, heat oil in a oven proof pot or Dutch oven. Add beef and brown each side. Remove from heat and stir in the broth mixture and bay leaf. Cover and bake for 1 1/2 hours. Add potatoes, turnips, onions and carrots. Cove and return to the oven. Bake for an additional 45-55 minutes or until vegetables are tender. Remove bay leaf and serve.
