Mix all above (except chips) together into dough. Dough should be slightly sticky, not crumbly. If still crumbly, mix some more and add small amount of reserved egg.
If one flavor is desired, add now*. For two flavors, divide dough in half, add flavors and/or chips. Work with each half separately.
Turn onto floured board and with flour dipped hands knead slightly . (add additional flour so not so sticky) The dough should be soft, somewhat elastic and easy to work with. Transfer 1/2 dough onto oiled and floured cookie sheet (or line sheet with parchment paper). Form into approx 10"(to 12")long by 2" wide by 1" high rectangle. Place rectangle down the length of the cookie sheet reserving room for the other rectangle. Repeat for rest of dough. If adding chips, be sure to knead the chips into the tube so evenly distributed.
Bake in 350 degree oven for approx. 25 to 30 min. Watch! Should be light tan in color; crust should be firm and knife blade or cake tester should come out clean. Cool slightly - 10 to 15 minutes. Starting at one corner, slice on diagonal into aprox. 1/4" to 1" thick cookies (thinner for crunchy cookies, thick for true biscotti). Stand or lay on cookie sheets and return to oven for approx. 15 to 20 min. more, turning cookies over midway through the baking time if laying flat. Watch carefully so they do not get too brown. Thin cookies will not take as long so watch. Cool. Store in airtight container. Great dipped in coffee. Chocolate chip is my favorite.
*for orange or lemon biscotti add grated rind. And use lemon extract instead of Almond.
For Cathy's Orange Cranberry biscotti: Use Orange Extract instead of Almond Extract. Replace Almonds with Craisins - I used about 3/4 of a cup. No Chocolate chips.
