Tried to make General Tso, something not exactly right but still delicious. Whatever.
Mix egg and 3 tablespoons corn starch, salt, pepper in a bowl. Mix and coat cubed chicken breast
Add oil 1/4 inch deep and pan fry until golden brown. Move cooked chicken to rack or paper towel and drain pan.
Mix Soy Sauce, sugar, broth, vinegar, crushed red pepper, ginger, 2 tablespoons corn starch and pour into heated pan and bring to a boil. When it starts to thicken add chicken and keep simmering until coated and thickened. Add spinach a minute before removing from heat. Add more corn starch if the sauce stays too runny.
Serve over rice.
