Berries over an amaretto cream shell
SHELLS
Whip cream and refrigerate. Whip cream cheese. Add 1/2 cup sugar to cream cheese, making sure it is lump free. Add 1/4 cup amaretto, do not overbeat or let it get runny. Fold in the refrigerated whip cream.
On a cookie sheet lined with waxed paper, mound 1/2 cup of the mixture. Use a spatula or spoon to shape each mound into shallow cups/tarts. Freeze.
After frozen remove from cookie sheet & store in Airtight container. Separate layers with waxed paper. Store in freezer.
SAUCE
Purée frozen raspberries in blender. Strain to remove seeds. Add 2 tbsp sugar and 1 tbsp amaretto. Fold in fresh berries. Sauce should just moisten the berries...should not be real runny. Refrigerate
To serve: Place a frozen cup on individual serving plate and top with sauce. These will soften very quickly so serve immediately.
Even if doubling recipe for the frozen cups, do not double or increase recipe for sauce.
