Pour cooked pasta into a deep casserole dish (13 x 9).
Place sharp cheddar throughout the pasta.
In a bowl, combine cream, green chiles, and salt/pepper. Pour over pasta.
Cover with foil and cook for 30 minutes.
Remove foil, place Monterey Jack slices on top and bake for a little longer, to your desired color.
Get the sharpest cheddar you can find. I usually use Cracker Barrel Aged Extra Sharp (black pkg, white cheddar)
