Anadama Oatmeal Bread

Ready in 3 hours 45 minutes

Moist bread with a unique hint of molasses.


1 Large Egg; beaten (Optional)
1/3 cup Oatmeal; (30g)
3 tablespoon Cornmeal
1 3/4 cups Water; Boiling
3 tablespoon Butter
3 tablespoon Molasses
1 1/4 cups Whole Wheat Flour; (150g)
2 1/2 cups Bread Flour; (318g)
1/3 cup Dry Milk
3 tablespoon Vital Wheat Gluten; (Optional)
2 teaspoon Salt
2 teaspoon Dry yeast

Original recipe makes 14 Servings



Add Oatmeal, Corn Meal, and boiling water. Mix very well to prevent lumps.

Cool 10 minutes.

Put in bowl.

If using a bread maker with the dough setting Add the ingredients to the pan as suggested by the manufacturer.

Else Knead, let rise, punch down, rise again

Grease and lightly dust your pan with cornmeal

Shape for loaf pan, allow to rise, slash top, egg wash top of loaf.

Bake 375 for 45 minutes.

Remove from Pan

Allow to cool for at least 45 minutes before slicing.

The egg wash is a fork beaten egg brushed onto the top of the loaf just before baking. It adds a nice shine to the top of a dark brown loaf. This recipie is adapted from my Aunt near the boundry waters in Minnesota. [I posted this recipe.]
