This is what home-cooking is all about! Heavenly !!

"Was in the mood for a little comfort food on a chilly Saturday night. This hit the spot. I haven't had chicken & dumplings in years.

Used 6 breasts...yes, a little much for 3 of us...but will use the leftovers for a chicken pie in a couple of days.

Following recipe...the only mention is that you might want to use some chicken stock for part of the water volume as it needed a little more flavor. Additionally...we had to add salt. Perhaps the chicken stock added would take that place.

Overall...a great recipe. Will definitely consider this as a re-do in the dead of winter.

8 Chicken Breasts -- boneless
1/2 cup celery; chopped
1/2 cup onion; chopped
1/2 cup carrots; sliced
1/2 cup parsley -- fresh; chopped
1/2 teaspoon Poultry seasoning
1/4 teaspoon rosemary; optional
1 teaspoon Salt
1/2 teaspoon Pepper
water; to cover chicken
2 cups Bisquick baking mix
1/8 teaspoon Dried thyme
1/8 teaspoon Black pepper
1/8 teaspoon Poultry seasoning
1 dash Ground nutmeg
1 tablespoon dried or fresh parsley; minced
2/3 cup milk

Original recipe makes 8



In large Dutch oven or kettle, combine chicken, celery, onion, carrots, parsley, poultry season, rosemary, salt, pepper; cover with water and bring to a boil. Turn down temperature and cook on low until chicken and vegetables are tender. (approximately 1 hour) Remove chicken breasts, cool, and cut up in bite size pieces and return to vegetable broth mixture in kettle.

For dumplings, combine bisquick mix, thyme, nutmeg, poultry seasoning, parsley; stir in milk just until moistened.

I usually double the dumpling recipe because we like lots of dumplings and a thicker gravy.

Drop by tablespoonfuls onto the boiling broth. Cook uncovered, for 10 minutes; cover and cook 10 minutes longer.

A little time under the broiler makes dumplings nice and golden...nice texture!

Really nice recipe, very easy to make and excellent flavor. I used chicken thighs since we prefer them to breast. Next time I will double the dumplings as recipe suggests, but I didn't want to deviate much in the first try. I may also add more carrots and celery next time.

Really good just the way it is, but 8 chicken breast are a lot we use about 3-4 for a family of 5. And always make extra dumplings.

I made my own chicken part, but I used the dumpling recipe here. They were yummy with my gravy-stuff. Btw, 8 chicken breasts is a lot, even for 8 people.

My family loves this! I always wanted to make chicken and dumplings and this recipe was perfect! If you want a little thicker sauce just add some corn starch! Thanks for sharing this recipe.

Tried this for the first time & the whole family loved it I did as other viewers suggested and added a can of cream of chicken soup to it, it was great.
