Suggest a better descriptionIn a large hot pot sweat the onions and garlic in olive oil. Add the fennel seeds, chilli, sugar and soya sauce. Turn the heat up and stir in the tomato ketchup and add a little water to thin down the sauce. Add the spare ribs and stir until the ribs are well coated. Turn the heat down and simmer until the meat is tender, approximately and hour and a half. Remove the ribs from the pot and skim off the fat from the sauce with a ladle.
