These are great as a low calorie, high fiber snack
Mix flour, oat bran, Splenda, baking powder, baking soda, salt, nutmeg and cinnamon.
In another bowl mix buttermilk, egg whites and oil. Add to dry ingredients. Stir until dry ingredients are moistened. Add apple.
Put paper muffin liners in muffin tin. Put about 1/4 cup batter in each muffin cup. Bake at 375 for 18 to 20 minutes until toothpick inserted in middle comes out clean.
Store in ziplock bags in the refrigerator for up to 5 days.
