This moist apple cake is perfect when combined with caramel sauce.
Combine eggs, sugar, oil, and milk. Stir in flour and cinnamon until just combined. Fold in apples, pecans, and coconut. Pour batter into a greased and floured 10-inch tube pan.
Bake cake in a 350-degree oven for 55 to 60 minutes. Cool on a rack for 10 minutes. Remove cake from pan. Cool thoroughly. Serve with Caramel Sauce.
If you can't get self-rising flour, you can make it. 1 cup self-rising flour=1 cup all-purpose flour plus 1 teaspoon baking powder, 1/2 teaspoon salt and 1/4 teaspoon baking soda.
