Place flour, oats, sugar and baking soda in a large bowl. With two knives or a pastry blender, work the butter into the dry ingredients until pieces are uniform and quite small.
Mix apples, sugar, cinnamon and lemon juice and place in bottom of a 9” square pan (9x12" is fine).
Cover with oats mixture. Bake 50 minutes or until done. Serve warm with vanilla bean ice cream!
