"This is yummy! I left out the jicama because I didn't have any, and substituted red onion for the shallots . The apple turns brown quickly- that would be my only critique!"
1. In a large bowl, whisk together honey, vinegar, oil and salt.
2. Add cabbage, jicama, apples, shallots, cranberries and walnuts;
season to taste with pepper. Yields about 1 packed cup per serving.
Let chill in the fridge for 30 minutes before serving to allow ingredients to soak in honey/vinegar mixture.
