Apple Jicama Slaw

2 tablespoons Honey
1 1/2 tablespoons Apple cider vinegar
1 teaspoon Walnut oil; Canola can be substituted
1/2 teaspoons Salt
2 cups Savoy, or Napa Cabbage; shredded
2 cups Jicama; raw, peeled, thinly sliced
2 medium Granny Smith apples; raw, peeled, coarsely grated
2 medium Shallots; raw, minced
1/2 cup Dried cranberries
1/4 cup Walnuts; chopped (pecans can be substituted)
Black pepper; to taste

Original recipe makes 6 Servings



1. In a large bowl, whisk together honey, vinegar, oil and salt.

2. Add cabbage, jicama, apples, shallots, cranberries and walnuts;

season to taste with pepper. Yields about 1 packed cup per serving.


Let chill in the fridge for 30 minutes before serving to allow ingredients to soak in honey/vinegar mixture.

This is yummy! I left out the jicama because I didn't have any, and substituted red onion for the shallots . The apple turns brown quickly- that would be my only critique!
