Sugar Free Low-Fat Cookies
Preheat oven to 300F.
Whisk Dry ingredients including zest in a bowl.
In electric mixer, beat Smart Balance, molasses, and honey until incorporated. (May have to use whip attachment.)
Scrape sides and add egg and applesauce. Mix until smooth.
Remove bowl from mixer and add dry ingredients, apple and raisins.
Mix with wooden spoon just until barely incorporated. Do not overmix.
Line cookie sheets with parchment and portion using a heaping #60 scoop (2 teaspoon) or about 1 tablespoon.
Sprinkle with a bit of oats and bake 9 minutes. Rotate and bake 8-9 minutes more.
Edges should just be starting to turn golden brown. Don't overbake.
Let cool slightly and move to wire rack to cool completely.
Based on a recipe from Mrs. Fields Cookie Book, this was monified to eliminate the sugar. Brown sugar was substituted by molasses and more honey; butter with a modern fat alternative.
