Suggest a better descriptionIn a small bowl combine sugars, flour, spices and set aside.
In large bowl toss apples with lemon juice; add sugar mixtures and toss well to coat.
Line 9" pie plate with 1/2 of pastry. Place apple mixture into the crust and dot with butter. Top with remaining crust. Flute the edges and cut slits into the top.
Beat egg white until foamy and brush over crust. Sprinkle with sugar on top.
Bake at 375 for 35 minutes then increase temperature to 400 and bake for 10-15 minutes more until crust is golden.
If edges of crust brown to quickly, cover with foil.
