"Very good muffins. I substituted the whole wheat flour for gluten free flour and they still came out moist and delicious (many gluten free items are not moist so this was a pleasant surprise.)"

Ingredients

1 1/4 cups Whole-wheat flour
1/2 cup Brown sugar
1 egg
1 tsp cinnamon
1/8 tsp Nutmeg
1 1/4 tsp Baking soda
1/2 tsp salt
3/4 cup pumpkin puree
1/4 cup Canola Oil
1/2 cup milk
1 cup diced apples

Original recipe makes 12 Servings

Preparation

Preheat oven to 350 degrees.

Spray a 12 cup muffin tin with oil or use paper liners. Mix ingredients together and spoon into prepared muffin cups, filling about 3/4 full. Bake for 18 to 20 minutes.

A perfect muffin! This is the best baked good I've ever tried with whole wheat flour. Just the right amount of sweetness. Super moist and tender.

I used pears, added flax meal 1tbsp an dried cranberries and it turned out to be the best muffins I have ever made. Fluffy moist and full of flavor.

Hubby opened a can of pumpkin and part of an apple trying to get our dog to take his heart worm pill so was very happy to find this recipe to use up the ingredients! Very moist and I did add a few chocolate chips to give it a bit more umph. Next time I might add a strudel topping to give it a little more texture as well. Very good overall

I just made 2 batches of these and my house smells amazing. I put chocolate chips in my second batch to give a different flavor. These are so easy to make and taste great. I'll be putting them on my favorites for sure.

I just made these are they are moist & tasty. I used raisins instead of apple's. I also added vanilla and pumpkin pie spice. Next time I am going to use chocolate chips.
