Delicious Apple Pie Like Food
Sift flour, baking powder, and salt for the crust. Cut in the lard until the mixture is in coarse crumbs. Mix lemon juice, egg yolks, and water add to flour mixture. Blend gently with a fork or pastry blender. The mixture is very moist. Turn out onto wax paper. Wrap securely, and chill for at least six hours or overnight. To prepare filling, mix sugar, cinnamon, salt, and cornstarch in a pan; add water. Cook for five min. Add apples and cook for 10 min. more. Divide dough in half. Roll one piece of dough onto a generously floured pastry pan into a rectangle about 11 by 15 inches, using a stocking covered rolling pin. Roll dough up on pin gently. Turn out into a 13 by 9 by 2 inch pan. Bring up against the side of pan about 1 in. Turn apple mixture into pan. Roll remaining dough to fit the top of the pan. Cut steam vents. Lay over apples. Press edges of dough firmly together and seal. Bake at 450 degrees oven for 20 min. Reduce heat to 350 degrees and bake 30 min. more. Cool in pan on cake rack. Dribble a thin confectioners sugar icing over the top, if you like.
