These are delicious and a family favorite here. Who can resist a muffin that tastes like apple pie for breakfast.. I have also made these using splenda sugar substitutes, and sunflower oil vs butter to reduce the calories a bit and make them a bit more heart healthy. They are just as good.


2 cups All-purpose flour
1 teaspoon Baking Powder
1/2 teaspoon Baking soda
1/2 teaspoon Salt
1/2 cup Butter
1 cup Sugar
2 Eggs
1 1/4 teaspoons Vanilla
1 1/2 cups apples; chopped
1/3 cup Brown sugar; packed
1 tablespoon All-purpose flour
1/8 teaspoon Ground cinnamon
1 tablespoon Butter

Original recipe makes 12 Servings




Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.

In a medium bowl, mix flour, baking powder, baking soda and salt.

In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.

In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.

Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

Made these couldn't believe how easy they where. I used olive oil instead of butter and put the apples in the blender instead of chopping (haha lazy I know). They turned out so yummy I had to bake a second batch they disappeared so quickly lol

Just made these, and had one with some double cream, I cannot get across how lovely these muffins are, they are so light and fluffy, I've never made muffins before, but I will certainly make these again, I changed absolutely nothing of the recipe, they're perfect as they are, although I did have to convert the cups into grams as I'm in the UK. Beautiful, thanks for sharing it!

Absolutely delicious. My first time making muffins and they came out great. Used olive oil instead of the butter but still amazing. Definitely will be making again.
