Great combination of sweet and savory
Start by toasting the pecans in a medium hot pan, in a little olive oil,
until they start to turn a little bit brown. Stay with them and shake them
around as you go and then, after a couple of minutes, when they're starting
to toast up, sprinkle a little salt over the top and take them out of the
pan to stop the cooking.
Use a segmented apple slicer to slice the apples into even wedges. (Any
apple will eventually turn brown when it's exposed to air, so you can
squeeze a little lemon juice over the top to stop that from happening.)
After the apples are sliced, crumble the blue cheese into a bowl, add a
small splash of heavy cream.....and then mix it up until it's the
consistency of cream cheese. Use your eye when you add the heavy cream,
there's no exact proportion. Put a dollop of cream cheese on top of each
slice of apple and then finish with a toasted pecan.
