My gluten free take on a Mollie Katzen original.
1. Preheat oven to 350 degrees. Butter a large cake pan.
2. In a large bowl, cream the butter and sugar. Add eggs, one at a time, beating well after each.
3. Stir in vanilla. Set aside.
4. In a separate bowl, sift together all dry ingredients. Stir them into the ground walnuts.
5. In a third bowl, whisk together the applesauce and yogurt or sour cream until well blended. Add chopped chocolate bar if you use it- or you can drop it on top of the batter when it's poured into the pan.
6. Add the dry mixture and the applesauce mixture alternately to the butter mixture (dry-wet-dry-wet). Stir just enough to blend after each addition.
7. Turn the batter into the prepared pan. Bake 45 to 55 minutes at 350 degrees. The cake is done when a sharp knife inserted into the center comes out clean.
I hate spice cake, didn't have a round pan and have to use a mix of different flours. Here's a link to the original, try it both ways. Add chocolate bars to it. Peanut Butter cups. Eat it with jam or ice cream. It's amazing.
It is a moist, rich, dark cake. Says it's minimally sweet, but I don't eat much sweets anyway, so this tastes FANTASTIC to me.
