Cookbook from Michelle Adams

Always a BIG hit!

"I used this recipe but revised it a bit because I had left over canned cranberry sauce and wanted to use it up making cookies. I ommited the spices and added 4 tablespoons of Cocoa and used the cranberry sauce instead of the applesauce. The cookies were great. My husband and son always have rasberry hot chocolate and they said the cookies reminded them of that drink."

Ingredients

Are you making this?
1 cup Applesauce; (unsweetened best)
1 teaspoon Baking soda
1/2 cup Shortening
2 large Eggs
0.5 teaspoon Cinnamon
0.5 teaspoon Ground cloves
0.5 teaspoon Nutmeg
0.5 teaspoon Salt
2 cups All-purpose flour
1 cup Sugar
1 cup Chopped nuts; optional
12 ounce Semisweet chocolate chips; (1 package)

Original recipe makes 24

Servings

Preparation

Need 3 bowls! Largest for Sugar and shortening, Middle for flour and spices AND Smallest for Applesauce and baking soda

Blend applesauce and baking soda together; set aside. In a second bowl, combine shortening, sugar and eggs; set aside. Blend together flour, cinnamon, cloves, nutmeg and salt in a large mixing bowl; blend in shortening mixture wiht flour mixture. Add applesauce mixture; stir in nuts and chocolate chips. Drop by teaspoon onto ungreased baking sheets; bake at 350F for 10 to 12 minutes. Makes 2 to 3 dozen cookies.

Works well with splenda, too. Making it safe for diabetics. Just don't include the chocolate chips. May want to make the drops a bit smaller, too! Tend to bubble up a lot more without the chocolate chips.

I just made these cookies and they are so good. It's a really sticky dough but they turn out fine. I normally like cookie dough that you roll but these converted me. This is added to my make list now.

Terrific cookie recipe - a great way to use up some of the homemade applesauce I had on hand! I used 1/2 cup of maple sugar and a 1/2 teaspoon of powdered stevia instead of the white sugar and used grain-sweetened chocolate chips instead of regular. Came out moist and yummy - thanks!

I used the recipe as is and it made 7 dozen cookies! I used a teaspoon scoop (as indicated) so they're all bite size. I couldn't imagine how much doubling the recipe would make! They were softer in the middle than I usually like for a cookie, but otherwise they are good. Fast and easy to make!

The recipe doesn't give amount of shortening (butter, oil, crisco, etc) I'd like to try it but don't have this necessary ingredient or the amount. Can you provide this needed info? Thanks. Connie Conniegod3@yahoo.com
