Easy family friendly dish, and it's low calorie too!
Place chicken breasts in a large, freezer zipper-topped bag and use a rolling pin to flatten to desired thickness. (It helps to have chicken partially frozen). In a skillet over medium high heat, melt one tablespoon of butter and brown chicken, about 2 minutes on each side.
Add remaining ingredients to skillet with remaining tablespoon of butter. Cover and simmer for 3-4 minutes or when chicken is fully cooked. Remove to dinner plates and serve with chopped parsley on top.
