Easy, delicious and elegant dinner. Prepare this impressive dinner for for friends and family.
Combine first 5 ingredients in a small bowl; set aside. Combine salt, cinnamon, and pepper, and sprinkle over both sides of lamb. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add lamb to pan; cook 5 minutes on each side or until desired degree of doneness. Remove skillet from heat; add apricot mixture, turning lamb to coat. Place 2 chops on each of 4 dinner plates; spoon remaining apricot mixture evenly over chops.

willowmoon 3y agoThis is just so good. I am going to make it for my hubby when he gets home!!! I used half if the soy sauce it called for and a smidge more of worestures or however u spell it.
dlabr1 4y agoEasy and excellent. It is also quick. That makes this a great weeknight option.
Heatherferg 5y agoTasty dish. I used dried and soaked apricots instead of apricot preserves adding the liquid from the reconstituted apricots. (12 apricots and 1/4 cup of water.)
Coetess 5y agoVery tasty. Chops very tender with a different taste. Definitley use canned apricots
Swotboy2000 5y agoI thought the mustard overpowered the apricot mixture a little, perhaps halving the amount to 1 tsp would be enough. However, I would definitely have this again, and recommend it to anyone.
JamesnSarah 7y agoWow! This recipe was delicious! I loved the flavours and colors. We made it with sweet potato mash and a cream/brocoli soup and an ear of corn...altogether about half an hour - about 8 minutes to actually prepare the lamb itself. If anything, I'd say it's a wee bit on the sweet side (and we used "simply fruit smuckers - no sugar added), but, it was such an excellent dish that I'm sending a copy of it to every cook I know!
