Great grilled steak served as main course or in fajitas
Mix all the ingredients except kosher salt and cumin in a plastic bag.
Marinate skirt steak for at least 5 hours – overnight is best
Remove from marinate – pat dry and rub with mixture of kosher salt and cumin. (You can discard marinate)
Grill – 3-4 minutes per side (you want them medium rare – any more done and they will be dry and chewy.
Let sit for 10 minutes – Cut across grain in ½ to ¾ strips
