Arroz a la Cubana

Cuban-Style Rice : seasoned ground beef served with fried plantains and sunny side up egg over rice


2 tablespoons oil
1 tablespoon garlic; minced
1 small onion; chopped
1 medium tomato; chopped
1 lb ground beef
3 tablespoons Soy sauce
1/4 cup raisins
1/2 teaspoon Salt
1/4 teaspoon pepper
1 cup sweet peas; (optional)
1 cup potatoes; cubed (optional)
3 ripe plantain bananas; sliced and fried in oil
4 Eggs; cooked sunny side up
4 cups Rice; cooked

1. In a pan, heat 3 tablespoons oil and saute garlic until light brown. Add onions and cook until transparent. Add tomatoes and cook for 5 minutes. Stir in ground beef and soy sauce. Add potatoes. Cook until meat is brown. Add raisins, salt and pepper and stir constantly. Add peas and simmer for another 5 minutes.

2. In a large serving platter, arrange cooked rice with meat in the center. Top with fried eggs and surround side of platter with fried bananas.
