Suggest a better descriptionHeat oil in skillet. Brown chicken, a few pieces at a time. Remove browned pieces to large baking dish or roasting pan. Add more oil to skliiet as needed. Sprinkle chicken with salt. Brown the sausage in oil remaining in skillet; remove to baking dish, spacing sausage among chicken pieces. Add half the rice in an even layer. Saute garlic, onion and pepper in oil remaining in skillet until onion is tender, 3 minutes. Sprinkle vegetables over rice layer. Add remaining rice in even layer. Stir saffron in chicken broth. Pour over rice; top with tomatoes. Cover lightly with aluminum foil. Bake at 350 for 1 1/2 hours or until rice and chicken are tender. Transfer to serving dish; garnish top with peas and pimiento strips.
