Vegetable Low Carb
Preparation time: 25 minutes Baking time: 20 minutes
Oven Temperature: 350 degrees
1. Cook Chopped Pancetta in frying pan until all of the Pancetta is crispy. Drain the excess grease and place the pancetta on paper towel to drain completely.
2. Quarter Asparagus; add the Asparagus to the frying pan until tender but cisp. Heat oven to 350 degrees.
3. Chop the Ricicchio
4. In oven proof dish add the Asparagus, Pancetta and Ridicchio and melted butter; Shred Mozzarella cheese over the top of the Asparagus, Pancetta and Ridicchio.
5. Place in oven at 350 for 20 minutes.
