Suggest a better descriptionCut kernels off cobs, but don’t cut too deep.
Do not use frozen corn.
Use peeler on cobs to remove in a separate bowl the fiberous milky remainder on the cobs, to get 2-2 ½ cups.
Soup Base:
3 Tbsp unsalted butter melting on medium heat.
Mince an onion, add to pot.
Add 4 slices of bacon in small pieces.
Add 2 tsp fresh thyme leaves, 2 tsp salt, 1 tsp black pepper.
Mix all together and cook for 8 minutes.
Add ¼ cup all purpose flour. Add ???5 cups???? water, whisk in slowly. Cut 4 red potatoes into half inch pieces (3/4 pound).
Strain corn fibers through clean cloth to get about ? cup, save til end.
When mix is simmering, add potatoes and corn kernels. Bring to gentle simmer, 15 minutes. Take 2 cups of soup, add to blender. Puree til very smooth. Can take up to 2 minutes. Add right back into pot and stir. Add cup of half and half, season with salt, pepper and a pinch of sugar. Season liberally bc we used water. Mix in fresh corn juice to soup, then done!
Serve with fresh basil on top.
