Try this Authentic Amish Breakfast Casserole recipe, or contribute your own.
In a large frying pan, brown sausage with onion and pepper, stirring to crumble sausage. Drain. In a large bowl, mix all remaining ingredients (except salsa), and stir in sausage mixture. Transfer to a greased 13x9" baking dish. May sprinkle extra cheddar cheese on top. Bake at 350 for 35-40 minutes. Delicious served with a spoonful of salsa.
JStoley 3m agoThis is a pretty good recipe for a breakfast casserole. I think it could use some spices, though. And maybe a bit of butter to fluff up the eggs. I put 12 in, 2 for each person, and it came out great. If you put fewer than 9 or 10 in, decrees the veggies and cheese a bit. That should give you a good ratio of eggs to sausage/veggies/cheese.

singleguy55 2y agomy biggest concern with the recipe was it served 24 and it said, use 6 - 12 eggs.?? When I reduced it to a serving of 2 it still said to use 6 - 12 eggs.?? So I had to guess at what I thought it would take. Having said all that, when I was finished cooking and started to eat this meal, it was very tasty. It was also easy to put together, a few ingredients to mix up and bake. I am willing to try this again, hopefully someone can fix the serving size issues.

lcgant 2y agoJust made this for my family and it is a HIT!!! I left out the cottage cheese and added 1/2 cup of milk instead. I will definitely cook again.
