In a large frying pan, brown sausage with onion and pepper, stirring to crumble sausage. Drain. In a large bowl, mix all remaining ingredients (except salsa), and stir in sausage mixture. Transfer to a greased 13x9" baking dish. May sprinkle extra cheddar cheese on top. Bake at 350 for 35-40 minutes. Delicious served with a spoonful of salsa.

singleguy55 1 year agomy biggest concern with the recipe was it served 24 and it said, use 6 - 12 eggs.?? When I reduced it to a serving of 2 it still said to use 6 - 12 eggs.?? So I had to guess at what I thought it would take. Having said all that, when I was finished cooking and started to eat this meal, it was very tasty. It was also easy to put together, a few ingredients to mix up and bake. I am willing to try this again, hopefully someone can fix the serving size issues.
