Southern French lentils and chicken
Chop or bland carrots, onion and fresh rosemary. Add to hot pan with a bit of olive oil and sweat.
Season chicken with salt, pepper, cayenne pepper. Add to medium pan. Throw in variety of herbs and garlic.
Add lentils to carrots and onion. Cook on medium heat.
Add chopped spinach to lentils.
Move chicken to side of pan and saute asparagus or green beans.
Add red wine vinegar to lentils. Once ready to serve, add yogurt.
Remove chicken. Cut into strips.
Serve chicken and asparagus/beans with lentils and crusty bread.
