Avocado and Mushroom Salad

1 lb White mushrooms
1/8 c olive oil
1/2 c Basil leaves; chopped
12 slices Italian bread
6 leaves Butterhead lettuce
12 oz Red bell pepper; diced
12 oz Green bell pepper; diced
1 whole Avocado
1/2 c Sherry wine vinegar
1/4 c Whole grain mustard

Original recipe makes 6



In a large bowl, mix oil, mustard, vinegar, basil and bell peppers. Set aside. Wash mushrooms and slice. Add to the dressing mixture and marinate for 10 minutes.
