Simple and delicious!

"I made pecan crusted tilapia and used the Avocado Cream Sauce as a topper. It was a hit, even with my 5 yr old! I didn't have chives or tarragon so I used a ton of cilantro and added cumin. It was delish!"

Ingredients

Are you making this? 
2 ea Avocado; Ripe
1 cloves Garlic; Quartered
2 tablespoon Fresh Chives; Chopped
1 tablespoon Fresh Cilantro; Chopped
1/2 tablespoon Fresh Tarragon; Chopped
Juice of 1/2 lime
2 tablespoon Butter
1/4 cup Heavy cream

Servings  

Preparation

In food processor fitted with chopping blade, puree avocado with garlic, lime juice, and herbs.

Melt butter in a saucepan over low heat. Stir in avocado puree and cook over low heat, stirring occasionally, until heated through.

Add cream and continue to heat, but do not allow to boil. Salt to taste and serve.

I used a thicker version of this to top a Crab Stack I did -- a small amount of fresh salsa and a light crab salad in a ring mold, topped with the avocado cream and some caviar.
