This is a delicious summertime dessert that I got from a co-worker. I told him it made my mouth dance! It reminds me of strawberry shortcake, only better. :-)

"This is a simple dish and good. On the ingredients list, I'd be more specific. Instead of buying a frozen pastry pie crust, I would buy a graham cracker one next time. Also instead of tub Cool Whip, buy the spray can of Cool Whip."

Ingredients

Are you making this?
1 6-oz package Strawberry Jello
1 quart Fresh strawberries; washed, sliced, and drained
2 cups Water; cool from the tap
2 cups Sugar
8 tablespoons Corn starch; level tablespoons
2 Pie crusts
Cool whip topping

Original recipe makes 2

Pies

Preparation

Bake the pie crusts according to package directions, and let them cool. Distribute the sliced strawberries evenly in each of the crusts, and set aside.

Mix sugar, corn starch, and jello together thoroughly in a medium saucepan. Add water slowly and mix well. Heat to boiling, stirring constantly. Cook about nine minutes, or until mixture thickens to the consistancy of almost a pudding. Let it cool until you can stick your finger in it without burning yourself (these were the directions I got? LOL). Pour the jello mixture over the strawberries and refrigerate until set. Serve each slice with a generous helping of Cool Whip or whipped cream.

Made these for a BBQ, and everyone loved it. I changed the pie crust and used a gram cracker crust for one pie and a crushed Oreo pie crust for the other. The addition of the chocolate (Oreo crust) takes this pie to another level.

Made 1 pie (half recipe) in a graham crust. Excellent! Will try with peaches & peach jello later this summer.

I really liked the taste of this pie but just a little too thick, I will do again just cut down a bit on the corn starch.. Definitely worth another try

I loved this recipe, it was delicious. Normally i dont like berries, but this i could eat forever. The only minus is that the jello didnt stay hard on mine like the picture, the fresh berries didnt look fresh when mixed with the jello, and the crust got stuck on the form even if i put margarine on the bottom. Any ideas how to prevent these things from happening the next time? Cause there will definately be a next time ;D
