Easy potato to cook for a nice dinner.
Wash and trim small or baby size ed potatoes. If potatoes are not similar in size then cut the larger ones in half to match.
In a medium size sauce pan add potatoes. Cover with water so that all potatoes are under water. Turn on medium heat and bring potatoes to a boil. Turn down and simmer for 5 minutes. Cover pan and let rest until ready to finish for dinner. Potatoes should be tender when pierced with a fork. If not, turn head back on and cook until tender. When tender...
Drain potatoes thoroughly. Return to slow/low heat. Add butter, salt and pepper. Cook over low heat turning potatoes occasionally so that butter coats all the potatoes. Do not brown the potatoes, just reheat and let the butter marinate the potatoes and they continue to cook. Just before ready to serve add parsley and Parmesan cheese. Let cook for about 5 more minutes until the Parmesan begins to melt against the potatoes. Place all potatoes in a serving dish or add a good sized scoop to each plat.
