Great for easy lunches
1. Heat a large lidded pan with a tbs of oil
2. Cook the bacon until the fat begins to run
3. Add carrots / celery / onions to the pan for 3-4 minutes
4. Stir in garlic / lentils / stock / tomatoes
5. Bring to the boil and simmer for 45 minutes
6. Add cabbage and simmer for a further 15 minutes and season to taste
7. Top with parsley to serve
