From beyond bacon
Pre heat the oven to 400 degrees. Halve the lemon and garlic cloves, quarter the onion. Pat the outside if the chicken dry. Sprinkle the salt and pepper inside the cavity and rub gently into the skin. Stuff the chicken with the lemon, garlic and onion. Place the bacon slices over the chicken ensuring none of the skin is exposed. Spread the cabbage in the bottom of a casserole. Set the chicken on top of
the cabbage. Roast uncovered for 90 minutes. Stir the cabbage half way through to prevent burning. Let the dish set 10 minutes before serving.
